NOTE FROM CHEF C: the bird flu (a couple years back) has finally caught up to distribution of turkeys around the Midwest. Since Minnesota was hardest hit we are at a virtual stand-still with our farmers' stock. We do suggest ordering a few extra packs (they are good for 1 year) as it may be 6-8 months before we have access to turkeys again.
